If you are working at a fancy restaurant you should never set your tray down while delivering drinks. That is a major nobbish and tacky thing to do. No matter if you are setting it on the table you are delivering the drinks at or at an empty table, you shouldn't do it.
Now I know that opens up another problem for you, how to get the drinks off the tray without getting out of balance. First thing to do is practice. Get some plastic cups and put water in them and ask your boss if you can take a tray home to practice with. Set the glasses in a circle, so they are balanced. And since you are delivering drinks you probably don't need to balance it on your shoulder. The key is not to rest the tray on your palms (don't flat hand the tray) Use your finger tips, that gives you 5 points of balance rather than one. Then you can feel the tray shift a lot better.
When you are ready to serve the drinks, you should carry the tray with your thumb mostly forward. Then when it is time to serve the drinks, rotate your arm from your shoulder, mostly with your forearm, so that your thumb is pointing back at you. Then remove the glasses in a balanced movement. It of course will take some adjustment in your hands to keep it balanced, but that just takes a little feel and a little practice.
And don't worry, everybody drops stuff at sometime. Even the most experienced servers.

The weight on the tray should be balanced proportionately and an assistant or busser should be ready with a tray jack to help guide the tray down. But there are times when you will have to squat down in order to place your tray without spillage. If you are carrying only drinks on a large tray try to have the smaller tray available to deliver the drinks to the specific table.

You need to use your other hand to stabilize the tray. Make sure you are using your palm and not the tips of your fingers on the hand you are holding the tray up with. Go slow. Ask if you can take a tray home with you for practice...and if you are working at a nice restaurant you shouldn't be putting the tray on the table, you need to keep holding it while you put the drinks down.

if its on your shoulder try bending slightly and taking it off your shoulder slowly with both hands... it works i have alot of expeirience as a waitress. if the doesnt work practice and or talk to your boss about carying it in a different easier way-- hope this helps!!

You have to center the food or glass in the middle then put more different things like spoon or silver ware, ... place the plates in the center first to get the balance. ..
