Just wondering if anyone knew what kind of collage courses you can take that involves horses

Any college with a decent animal science program will have horse classes. My alma mater UC Davis had a lot of different animal husbandry classes.
For people who are more interested in horseback riding than in veterinary science, there were also recreational riding classes.

You'll have to find a school that has an equestrian program, and through that you can take classes on breeding, grooming, riding, and many others that will involve horses.

Veterinary science, majoring in equestrian sciences would be a good bet...

you can take tons, vet, black smithing, training, championship riding, and breeding. I think there's sub categories too like equine massage.
