Pretty much any motorcycle will have enough power. Especially if you're looking at anything over 800 cc's.
The VTX1300 is a great bike, but it is carburated. New models from other manufacturers are fuel injected, which is a major benefit in a motorcycle.
Look at Kawasaki Vulcan 900 or 1600, Suzuki C50 or C90, or Yamaha V-star 1300 - all fuel injected, all liquid cooled (except C90, which is air/oil-cooled).

Check out the new-this-year Yamaha V-Star 1300, and the awesome 1900cc Yamaha Roadliner or Stratoliner. For the money the V-Star 1300 will be hard to beat, and the "Liners" are fantastic bikes, but a bit more pricey.
The Honda VTX line are also very good bikes, in particular the 1800cc version.

Here are my recommendations for a bike, read some road reviews/tests like from Motorcycle Consumer News (they'er the best) go to a few bike dealer's and sit on a few of the ones you like. They will all feel different, seat height, handle bars, etc. Set a price you'd like to spend and stick with-it.
The Kawasaki Vulcan has been at the top for years and I've owned 1500 and now a 2000.

I think it depends on if this is your first bike or an upgrade. I would never recommend this bike for a beginner for obvious reasons. I would think that anything over a 650 would have enough power for the job. You could always buy a cheaper bike like a Honda Sabre and put some performance parts on it. Lots of different ways to go and a lot of brands to choose from...good luck

You do seem to have a big interest in the VTX.
Many bikes can pass.
Never had a problem passing on the '79 Suzuki GS425L.
Chain stretching torque too.

The best bike for your money would be any of the big twin Harley Davidsons. Sure they are more expensive but they have more power, better build quality (those who say otherwise have never ridden one), and after 10 years you can sell it for the same price as what you paid for it. Seriously, you don't lose any money. What other brand can say that?
