I recommend the water show at Bellagio. If you call reservations, they'll be able to tell you times and songs the water performs to....and...it's free.
Any of the Cirque Du Soleil shows...i prefer KA.
Depending on where you're from, a 35 minute trip to Mt. Charleston is always pleasant in September and October.
Don't recommend Hoover Dam, due to the construction.
If you like comedy, George Wallace @ the Flamingo is a good show.
A trip to the top of the Stratosphere Tower is pretty awesome, at night.
And, depending on your budget, The Venetian Hotel has the most diversified restaurants.
The bell desk where you're staying will be able to recommend a night club, if you're into the party scene.

"Phamtom" at Venetian is awesome!!! It's a great show. Eeveryone will enjoy. "O" at Bellagio is great as well.
If you have money, I reccomend doing fine dining. The restaurants are truely world class in Vegas. Prime at Bellagio is a steak house, you need to make reservation two weeks ahead of time. Mix at Mandalay bay has an amazing view and the nathroom is a must see!!! Wynne has great restaurants as well..... like Daniel Buloud and Bartolotto.

Depends how much you wanna spend. You can get half off all tickets if you buy them the same day of the show but it sells out fast. Take your pick I have not saw a bad show yet. There are tons of free stuff to do too. Like watching the pirate show at TI or the fountains or fremont street. just walk the strip so much to do.
