It depends to some extent on the speed range. If it's rotating slowly enough to observe, a mark and a stopwatch to time a number of revs might suffice. At higher speeds, a tachometer would be favorite. A series of regularly spaced marks on the egg, with a calibrated variable frequency strobe light (adjusted until the marks appear stationary) is another option. Laser, strip of plastic reflective tape, photocell, frequency meter is another. Why would you want to?

Get a photo tachometer. This is a non contact means of measuring RPM. It uses a piece of reflective tape attached to the shaft of a motor (Egg in this case) . The tach directs a beam of light at the rotating object and detects the reflected light. It measures the time of rotation and computes RPM

You can get a cheap photo tach at Harbor Freight
