It symbolizes the unbreakable connection that occurs in a marriage. Of course, these days, people get divorced at the drop of a hat (another interesting expression), and to go along with that, ropes and string don't hold up well any more either. I just tried to tie up some cardboard for recycling, and sure enough, the string broke when I pulled at the knot gently. Sad times....
