MY MOM IS AN EXCELLENT COOK! I think of so many wonderful dishes when I think of her, macaroni and cheese (not from a box), homemade cheese and cayenne crackers, peanut butter cookies, buttermilk pies, fruitcake balls dipped in dark chocolate, standing rib roast, rum balls (had to sneak those), enchilada casserole, sage dressing, homemade chimichangas, crab salad. I could go on but I think I will go fix some of her chocolate tapioca pudding and relax. I have a whole bowl in the fridge. Thank you, mom. I love you.

Mom always made stuffed bell peppers when I was a kid and I hated them but as an adult I long for them. Every bite nowadays takes me back to the good old days when life was easy and carefree.Oh, how I miss those meals!

Dutch Oven Pancakes.
