We have always cleaned the surface , and then painted it with two coats of semi gloss latex , a very thick roller cover would do best , and just roll it , you have to watch for the paint "running" or dripping down from the crevices , but rolling back over it should get them. Also I have this web site that may help you more with the decision process .

Answer number on is spot on; a latex will work, with a long nap roller cover. Obviously that intends that the brick doesn't get hot enough to degrade the paint.

35 lbs. seems a bit steep in any market. I'd also not use semi gloss, but that's a personal preference. I'd also want a brush for any voids that the roller nap might not reach.

With all due respect however; I wouldn't be painting brick, no matter where it was.

All depends where you are painting it. Inside the actual fire place or on the outside.
I used ordinary cream emulsion for the outside of the surrounding bricks and went inside just about a few inches, then used black paint for the inside.
It's a special paint that won't bubble under intense heat, but you can get it cheaper than that by buying shops own version.
Wickes, Homebase, Focus etc. do all their own brands.
