You can carve them. They'll start to decompose a lot quicker than fully ripe ones. That might even add to the spooky -creepy effect.
Try rubbing petroleum jelly, lemon juice or some cooking oil on the insides & freshly cut parts to make them last longer.

Of course. If they are close to ripe, they will probably even turn orange a few days after they are picked.

They will probably ripen very quickly - before Halloween - they still have lots of time. It is very unlikely that they won't ripen by then.
Growing pumpkins many years, they always ripen naturally by fall.

yes, but you should pick them in late September and leave them outside during the day and take them in at night and they will ripen in the sun and turn orange.
