They clean them with lemon flour and water . All mixed in a paste. Then rinse and dry well. My husband work as a manager in an Italian restaurant for 30 yrs, . So this is the way they cleaned their pot´s he said

Try scrubbing the copper with a half a lemon and some salt..... the acid and coarseness will help shine it up a bit. Barkeepers Friend (found in a gold/blue can next to powdered cleaners like ajax) works pretty good on all types of metal.

They mix white vinegar with salt and white flour to make a paste. They spread it on the copper, let it sit 15 minutes and just rinse the paste and the tarnish comes off with it.

The keep them clean by rubbing them with lemon halves dipped in salt. Lemon juice and salt will clean copper in a way that is both natural and "food safe".
