snakes are cold blooded which means they don't need as much energy as a warm blooded animal in order to run their bodily functions. They digest slowly and then don't need to eat again for a week or even longer.

I think this explains it fairly well:

"Snake: Hunting and feeding
All snake species are carnivorous, but the size of their prey varies greatly from species to species. Most snakes are opportunists and will gladly eat insects, eggs, other reptiles, birds and small mammals like rodents as well as large mammals like antelopes – all provided that they are able to catch and kill them. The hunting methods also vary between the different snake species; some have a venomous bite while others strangle their prey by constriction.

Snakes have no teeth and can't chew their food, or even separate it into smaller parts. Instead they have a flexible lower jaw that allows them to swallow their catch whole. Snakes are able to swallow preys with a much larger diameter than the snake itself. The snake's body is flexible too, and you can see the outline of the prey inside a newly feed snake. Since all digestion has to take place in the stomach without any preparation such as chewing, it is quite a strenuous activity for the snakes. Some snakes will elevate their body temperature by as much as 6 degrees during the digestion of a large prey. The snake's metabolism is able to digest every part of the prey except claws and hair. If the snake is disturbed during the early stages of digestion, it will often regurgitate the prey since the snake is much more immobile than usually during digestion and less able to get away from potential harm."

It takes a lot longer to digest something when it's a whole animal and you can't chew! XD

Because they don't chew their food--they swallow it whole.
This in turn makes the digestion process longer.
