They usually carry the money all night. In some restaurants they cash out with a cashier through the night. In a restaurant where the server holds the money and their shift is over, they must "cash out" or somehow determine how much money they owe the restaurant for all the tables they've served throughout the shift. They get to keep what is left after paying "the house". Please understand that servers must also tip any people who help bus their tables, seat their tables, make their drinks from the bar, etc. They usually tip a percentage of their tips or a percentage of their sales. This means that when a table doesn't leave a tip for the server, the server still must tip others based on that amount, and a server actually LOSES money waiting on them. 15% of the total check is acceptable, 20% if the service was better than average.

They take it to a register. The only cash they will carry is their own tips. They try to carry as little as possible

At my restaurant, we keep all cash until the end of our shift, when a report is ran, and we turn in the cash we owe and keep the rest.

Generally it is to pay the table next to you for having to put up with loud u-bon-ic slang conversations.

Where I work, we keep it in our "bank", meaning our apron. We close out at night, give them what we owe, and keep the rest as our tips
