They're in denial, ignorant of the meaning and implications of what they're saying... or they're just retarded. Color does matter. Denying difference denies the ability to celebrate it and is just an attempt to homogenize the US, which would make it really f-ing boring. Who wants to be boiled down in a melting pot? Too many Euro-Americans already have been, and are so steeped in the US culture of consumption, and so cannot relate anymore to the desire of people of color, new immigrants, to hang onto their heritage.
Accepting that we ARE different is NOT a bad thing. It's how we VALUE and EVALUATE those differences that matters.

Some are sincere and some are just trying to be politically correct. Can't say which ones are which for sure.

I am sincere. I don't believe in political correctness, although I know many who do. My opinion is my opinion, and I definitely believe colour doesn't matter.
I am interested in people, and most frequently can be found in mixed company. In school most of my friends were Chinese, Japanese, Hispanic, and Black. I relish and recognise differences, but don't attach any significance at all to colour.

You can only go on what people say, so if they say it doesn't matter then go with that.
Too many people want too many different things for there to be one answer to that question.
For my part, it really doesn't matter. How a person acts and what their motivations are is what I pay attention to.
But if you choose to believe it's a put-on, then nothing anyone says is going to change your mind about that anyway.

To me, colour does not matter much. I usually treat people as individuals, although past experience of people of a group does influence me too.

Real, blue or red makes no difference at all.
(Yes this more than answers the question you're asking, humans are humans).
