In my experience in traveling, Amsterdam is a much better airport to fly into and lay over. Every time I have gone, or one of my co-workers have gone, through Paris a piece of luggage is always coming up lost and/or missing. I have never had a problem in flying through Amsterdam (eight times) that I have had in Paris (eight times). Just my opinion.

Paris has several airports, some of which are huge, with several terminals I have heard.

Amsterdam has one airport, and while it theoretically has several terminals they are connected into one complex, you can walk from the one to the other without having to pass customs and immigration.
Which makes transferring a lot easier. (But you can be lucky in Paris too.)
But while not too big, there is a lot to do in the departure lounge of Schiphol, including a museum with some of the paintings belonging to the Rijksmuseum.

If you have a longer time in Amsterdam, the airport is connected to the town by rail, less than 20 minute ride, 6 times an hour for most of the day. And at 6.20 Euro for a day return ticket not too expensive either.
