Make Sun dried tomatoes:
http://homecooking.about.com/od/howtocookvegetables/a/sundriedrecipe.htm
If you get tired of salsa, sauce, gazpacho, and sun dried tomatoes then start filling bags and hanging them on your neighbors doors. That's what I do and they love it.
Share with friends and family as well.
If you work, then take some to work as a healthy snack option for you and your coworkers.

At the top of the tomatoe cut an X in the skin. Put them in boiling water w/salt for about 7-10 minutes or until you see the skin start to peel. Let cool, then peel. Put them in the blender and then freeze the containers. Or if you have canning jars you can tightly seal and store. This is great to have if you want to make your own red gravy, or to add to stews and soups in the winter.

You can cook some of them down with seasoning and freeze it. At a later time serve them as a side with cheese on top.
You can skin them and freeze them whole to add to stew or soups. You can make pasta sauce and freeze that also. Or you can learn to can them.

If you don't want to bottle or process them, you can always donate them to a food bank or hostel.
