I believe it was Matthew McConneghey... he played himself when Carrie, Mirranda and Samantha went out to LA for those few episodes

I know in the question you said "himself" but Heather Graham also guest starred and played herself twice. I say "also" because someone already mentioned Matthew McConaughey, and he did it once.
