Christmas is the one day everything in the Netherlands is closed.
Even most restaurants, the others have a waiting list, early bookers only.
(There may be places that have no prebooking but not many.)
Christmas is a 'stay at home and be with the family' kind of thing. And that is almost as much on the 26th of December.

New years eve there are many parties, till midnight a lot happens in the homes of the people, at midnight there are many people firing fireworks, mostly privately but on the streets, but all bigger towns will have public displays too, after midnight many of the young people go clubbing or something like that.
New years day most museums and shops will be closed too, even the ones normally open 7 days a week.
So if you come, check beforehand if the places you want to go will be open.

The time in between most of the museums and shops are open as usual.
There is a lot of Christmas decorations, but Amsterdam is not the most Christmas minded town in the world.
