It grosses me out when they make the sushi with their bare hands. The could have just came out from the restroom, or wiped their nose.

Hands are cleaner. They wash hands very religiously, if they wore gloves your would have to count on them changing them for every customer, and that the hands were clean to start with. Remember, it's not like a fast food place where the guy that does the sushi cleans the toilets and washes the floors all day long too. I was at one place where the person washed her hands, got out the ingredients for my order, washed her hands, put them together, washed her hands, got my next dish, washed her hands, got my drink, washed her hands, etc.

I don't know what the laws are but I lived with a sushi chef in Japan a few years back. Traditionally, they don't wear gloves because they need to feel the rice and what not and the gloves might impart a funny taste to the sushi.

They keep their hands very clean (it's practically an art for them. A real sushi chef trains for over 10 years as an apprentice before he can be one but of course these days, any tom ,dick and harry can be one) . According the that sushi chef, men make better sushi chefs than girls because men have cooler(temperature-wise) palms 0_0

Well they could have also just put on a pair of gloves, wiped their nose and scratched their butt before they prepared your sushi. I don't know about the state you live in, but where I live, gloves are not required. They don't require them because people tend to do more harm with them on than off. For example, they pick up a piece of raw chicken, and then stick their hand in lettuce. They think "It's cool, I'm wearing gloves", when in reality, it's no different from doing the same with bare hands. What it comes down to is culinary employees need to learn basic sanitary procedures. Meaning, they wash their hands regularly, and/or change their gloves regularly. Just remember, just because they are wearing gloves doesn't mean the gloves are clean.

no they should not.

My father is a sushi chef and he keeps his hands clean.

if you are so paranoid, then sit at the sushi bar and ask for the sushi chef to go wash his hands really quick before starting to prepare your food.

Sacramento capital should add a law requiring all sushi eaters carry their own gloves to eat sushi.
