.... but "bow-wow"? how does that work?

Both would be onomatopoeic since they are immitative of or suggestive of sounds a dog makes. Bow-wow may not be perfectly imitative but it is suggestive.

Yes, they would both be correct.
Different dogs have different-sounding barks.
A big alsation might go 'woof' and a little terrier might go 'bow-wow'.

Yeah, it's funny what people imagine their dogs are saying.

I distinctly remember from my high school Spanish textbook that their dogs said "gua-gua".

One of my dogs has a tendency towards howling, so his barks actually do sound like "Bow-wowowowowowoo".
