Here's a chart that gives a description of the heirloom tomato varieties...their size, flavor & productivity which include the Beefsteaks which have the flavors we remember
http://www.heirloomtomatoes.bizland.com/varieties.htm
These are large, red & sweet tasting:
'Giant Colossal' up to 1 1/2 lbs good flavor, heavy producer
'Red Brandywine' This large beefsteak variety tomato is legendary for it's "exceptionally rich, succulent flavor" and "old-fashioned tomato taste." Superb flavor...An Amish heirloom
'Giant Belgium' 12-24 oz fruit very sweet
'Black Krim' Sweet tasty dark-red
'Costralee' Large Beefsteak with great flavor
'Delicious' Large 1-2 lb Beefsteak

Good luck! Hope this helps.

My favorite tomato for salads is an heirloom variety called Tigerella. It is a small tomato, not cherry size but larger. It is in the orange variety but striped. The tomato has a great tang somewhat like lemon but not lemon...just a hint of lemon. The plant is a prolific producer and goes well into the season up to first frost. This tomato adds that zest to a salad that can't be beat. I order the seeds from an heirloom tomato catalog. There is, in my opinion, no nursery grown tomato plant such as you find at WalMart, Home Depot, etc.that can come anywhere near taste and performance than an heirloom tomato.

My absolute favorite for a BLT (I know you didnt ask but I can't help myself) is Cherokee Purple. The taste of this tomato is out of this standard tomato world. Go heirloom, you'll never go back to Big Boys, early girls, etc.

Amish Paste (red). It holds up well to the tossing of a salad, has wonderful flavor, juicy without being watery. Good balanced flavor between sweet and tangy. High yields, few problems, and good for many uses.

If you want a tangier flavor, Garden Peach is a nice golden orange tomato, the size of a large egg. Very sturdy and crack resistant. High yields.

For salads, Sun Gold without question! It is a very sweet cherry-type tomato and very prolific.

The Sun Gold is an heirloom which I plant on the trellis because it easily can get taller than six feet if the growing season is good (and branch out extensively).

A ripe Sun Gold, if picked warm, will split if you run it under cold water while still warm. They are definitely not "traveler" tomatoes which is why you won't find them in grocery stores, ripe ones split easily. They are sooooo worth growing them!!!
