Tuna Salad:
Iceberg lettuce (it's crisp and crunchy)
1 can tuna, drained
1 large or 2 small tomatoes, peeled and cut into chunks
2 or 3 hard-boiled eggs, shelled and diced
1 crisp apple, peeled and cut into small dice
Sweet pickles, cut into small dice
[If you want to add some extra crunch, you could also include chopped hearts of celery, canned water chestnuts, drained and chopped, or even chopped walnuts or pecans - who's going to stop you??] :-)) :-))
Mix everything except the eggs, tomatoes and lettuce with a dressing of mayonnaise (or Miracle Whip, if you can get it. It is a bottled salad dressing, rather like spicy, vinegar-y mayonnaise), put on top of a bed of lettuce, which has been sprinkled with red wine vinegar, top with tomatoes and eggs, and shredded cheese, if desired.
My favorite! :-)) I could live on this stuff all summer long :-))
I'm crazy about vinegar. Normal people could probably skip the part about sprinkling the lettuce with red wine vinegar :-))

My perfect salad is one without lettuce. I do love lettuce-mostly the shrub type greens but the perfect salad has all the other stuff without the lettuce...cucumbers, beets, tomatoes, corn, kidney beans, garbanzo beans, grated cheese, hard boiled egg slices or quarters, anything else would probably work too! then ranch dressing on the side to dip a few things into. Yum.

This is a very good question.
Shoney's some time back in the 60's too 80's here had a "Chef's Shrimp Salad" that was outstanding and at that time a great deal.
It was like your normal chef salad but with a couple of bags of cold baby shrimp thrown in on top and with Blue Cheese Dressing.

Wandering down the fields, picking loads of wild rocket, fresh Jack by the Hedge, some water mint from the pond then adding some fresh finely chopped Rosemary, half a raw onion, an apple, some newly dug boiled pink fir apple potatoes, Olive oil, just of hint of freshly squeezed lemon juice, mustard, a clove of chopped garlic. Serve potatoes boiled, toss in salad. Oooh Yummy.

Mangoe chicken salad.
Ingredients:
lettuces, mangoes, red peppers, sweet red onion (optional), heart of palm pieces, pine nuts, chicken breasts cut into long 3/4 inch wide strips, chicken marinade, salad dressing, cooked chilled shrimp (optional). I prefer the smaller golden champagne mangoes to the larger orange ones for this.
Grilled chicked strips - marinate them first in a honey/lemon/mustard mix with a dash of chipotle until they are tender. Several hours or overnight in the refrigerator, or 1/2 hour at room temp. Then grill them or stir fry them. Set them aside to cool.
Wash, dry and cut your salad into medium sized pieces. Trim off all brown rotting stuff! It is not good for you. I like to use a mix of romaine and spring mix greens. Add delicately sliced red peppers, pine nuts, heart of palm pieces, sweet onion slices and mango pieces cut to the size of your index finger nail. Save 6 or 7 chicken strips. Toss in the remaining chicken strips and drizzle a light honey mustard, dressing, balsamic blue, champagne dressing or whatever you like. If you like, you can throw in some cooked chilled shrimp. Pile the salad up in a mound and decorate the outside of it with the 6-7 chicken strips, some red pepper slices and mango pieces. It's a complete meal most people will love.
