Yes, you can use a Macy's gift card to purchase Coach products. An EGC card can be used to purchase anything at a Macy's store (not it's sister store Bloomingdale's), including another EGC in a smaller amount or food if there happens to be a food court area like the SF Flagship stores.

All May Co. stores have been converted to Macy's.

Only if the Coach products are being sold in the Macy's. Store gift cards are restricted to that store. They are sometimes honored in sister stores owned by the same company (Macy's is part of Federated stores so a Macy's card might [no guarantee] be honored in May's). There is no way for a non-aligned store to accept a gift card and then transfer the bill to the original store for payment.

macy's does sell some coach, so you would be able to use a macy's gift card to buy coach items.

Yeah you can use it to buy anything in the store, coach included unless it says no coach on the card.
