then how would i graph this on a number line?

x - 5 < 3

Add 5 to both sides.

x < 8

So x is less than 8. Since this range does not include 8 itself, draw an open circle at 8 (as opposed to a filled circle) and extend the line to the left to indicate smaller values. Make sure the number line includes zero so you can identify the positive and negative directions.
