what is the point of a differential tape back up if you can't restore files from that tape?

Generally you do a complete backup followed by incremental backups. The complete backup will take a lot of time to transfer all files to the storage media while the incremental backups will only get what has changed since the last backup. To rebuild a system or locate a file, you start with the full backup and go through the incremental backups to obtain the latest versions of files.

Never not worked for me.

Remember however what a differential backup is - so not everything is going to be on that backup.
