Makes 4 1+1/2C servgs. 1# chicken breast strips, 1/2 chopped onion, 14oz can chi. broth, 10oz can cream of celery soup, 2C frozen mixed veggies, 2C uncooked mini-lasagna noodles (mafalda), 1/2 tsp lemon-pepper seasoning, a little fresh parsley for garnish. Spray pan w/nonstick cooking spray, add chi & onion, stir over med-hi heat (4-6') until chi browns. Add rest of ingredients, mix well. Bring to boil, reduce heat & cover. Simmer 15-18' or til veggies & noodles are tender. Garnish as desired.

Sounds absolutely yummy! Before I leave the page, I'm going to make a copy. My son would love this.

I would vary though - I always do. I'd make my own cream of celery soup with finely chopped celery, 6oz cream, 10 oz. water, 1 tbsp flour, 1 Organic Gourmet bouillon cube. Shake cream, water, flour in a shaker to combine (eliminates lumps when cooking). Put in sauce pan with celery, bouillon. Cook til thickened. To replace chicken broth too add 14 oz. more water, MSG free chicken bouillon, heat until bouillon dissolves. MUCH cheaper, and no MSG or high sodium.
