I can be easy fast and cheap on a Friday night. (fish n chips)
But since I love to cook, I'm usually difficult, long and expensive. Divine to eat though. My dinner that is.
Have another beer Roland, I think I need one too to get me out of this one.

Take 2 boneless, skinless chicken breasts, thawed. Pound them flat with a mallet (a real cooking mallet, not any hammer). Layer on each of them one piece of ham, one piece of swiss cheese, and one slice (about 1/4 inch) from a brick of cream cheese (or just spread some on). Wrap the chicken around the ham and cheeses, turn over (so the flap is down), and insert a toothpick to hold it all together. Bake on a pan at 350 degrees for 25-30 minutes. This is a cheap way of having Chicken cordon Bleu. Serve with green beans or peas, and stovetop stuffing.

Dang, well, I guess so! I get my groceries at ALDI and it takes me 20 minutes to prepare a slammin meal. LOL
