Israel is a great strong name! Of Hebraic origin, it carries the meaning, God contended; Prince of God; God preserves. BTW, it isn’t just the name of a country. Where did the country Israel take its name from? Israel (Yisra'el) aka Jacob from the Torah/Old Testament (Genesis 32:28) his name was changed after he wrestled with an angel. Personally, I see nothing wrong with the name Beth, although many people think of it only as a girl’s name, being the shortened form of Elizabeth. Beth is a Hebrew combining word meaning “House of,” hence the reason it is seen frequently on Jewish houses of worship e.g. Temple Beth Israel.
Since Beth simply means “House of,” you could add something to it to make a name like Bethel "house of God” or Beth-shemesh "house of the sun” if you like the sound of the name Beth or want to keep in the Hebrew/Religious theme.

In my church Israel is a sacred name, its an honor and a blessing to have this name so yeah, I think its a wonderful choice. It has great symbolism and overall is a really powerful name. I don't think Beth is the best middle name for a boy but Israel Beth does sound great for a girl. For a boy maybe you could choose another Christian name to go with it. Something like Israel Thomas or Israel Martin would be nice. Its also really nice as a middle name, I think Noah Israel, Micheal Israel, Zachariah Israel, Nathaniel Israel, Jonathan Israel are examples of some good combinations.

umm..
I dont kno about "BETH" as the middle name but Israel is nice..
In Hawaii, there was a singer named Israel & his nickname was IZ.. we called him braddah IZ..
