Amanuensis (specifically applied to intimately trusted servants acting as a personal secretary); a person employed to write letters, what another dictates or to copy.

A similar semantic evolution occurred at the French royal court, where the secrétaire de la main du roi, originally a lowly clerk specializing in producing (technically forging, but on royal command) the Sovereign's signature on more documents than he cared to put his pen to, developed into the secrétaires d'état (Secretary of state)

Scribe is the old-fashioned word, usually implies handwriting.

A ghost-writer I think applies to books rather than letters.

A secretary or a personal assistant types and sometimes composes letters for their employer.

A scribe is a copier of manuscripts. A scrivener is a public copier, especially of legal documents. An amanuensis is one who writes from dictation or copies manuscripts. They all are most likely to do it for pay. "Scribe" is the best word to use for the situation you mentioned. An amanuensis is more likely to be a personal secretary.
