Led Zeppelin as far as rock goes. They were influenced by not only fundmental blues artists from the 30s and 40s but eventually evolved into using wide range off styles that included Hindi sitar influences and layed the groundwork for every metal band that followed. 10 albums in 10 years. Each one encompassing the changing times and each one(although some not as much as others) a success.
I would defy anyone to pull a bad Led Zeppelin song off of any of their albulms.

Heck, they even had their own plane.
If thats not the mark of a great band, I dont know what is.

The Beatles. Led Zeppelin is my favorite band, but it's obvious how much influence the Beatles created. They experimented with several genres, and even when they weren't talking to each other much anymore, they still tried to record another damn great album (Let It Be) for the fans. Plus, they raked in tons of money (whichs shows how many fans they have) without ever selling out. If people like Elvis or Chuck Berry are the epitome of rock n' roll, then the Beatles are the epitome of rock in general.

The Clash. They not only were the seminal punk band, they added reggae before reggae was even cool. They took their music into different directions and explored many different sounds, eventually influencing punk/indie music up to today. Their lyrics were topical and not simply trite love songs. And seeing them live was an incredible rush too.

I'm not sure you can ever escape the influence of the Beatles. They laid down the model for what a rock band is supposed to be.
