When it smells bad and has like some yellow watery stuff. Also it starts building mold.

lol I think sour cream keeps longer than milk but I usually go by the date on the package

Its usual good culture gets infiltrated with a foreign culture that is not smell or taste-bud friendly.

If it has mold attached or smells at all "not fresh", chuck it and buy a new one.
