I live in S. CA and have quite a huge banana tree which has now for the second year fruits. Last year I cut off the bananas while they were still green and thought they would ripen anyway, but they tasted horrible! When is the best time to cut of the fruits?

There is a trick to it and it is not just timing - it is also what you do after you pick them.

If the plant is huge and produced more than one crop it may be a plantain. They are generally larger than a banana and most types will taste bad until cooked.

a little before ripe or oopps they be spoiled already
