A sphere is a simplification of the actual shape that is useful for many purposes. The oblate spheroid is a somewhat better description but still over simplified. If you exagerated the variations in earth shape it would resemble a pear. Fatter on the southern lattitudes, and somewhat flat at the poles. Knowing the exact shape is importantant for tracking satellites and for geodetic land surveys.

Oblate spheroid - in other words flattened at the poles.

Think about it. If you take something (not completely solid - say, mostly liquid with a thin shell) round and spin it very fast the inclination would be for it to bulge where the equator would be and flatten on the top and bottom.
