The assasin will be quite heavily build (not fat, very muscular). He has a deep, gravelly voice.
Any suggestions on a good nationality to suit him without being too cliche/stereotypical like Arab, or some kind of middle-eastern.

I know you said "not Arab", but how about Persian? http://en.wikipedia.org/wiki/Hashshashin - I believe that this is not the same type of assassin as that which you wish to avoid, and they are literally the definition of assassin. Other (notorious) assassin organizations: Japan (ninja, yakuza), China (tong).

Maybe from one of the countries that were once yugoslavia. They went through some tough crap when they broke up and you could use that to build him/her up and give reason to his/her choice of profession
