hmm. well i'm not convinced that there IS a song that all guitarists should know - surely copying defeats the object of you finding your own style? you can borrow riffs solo tweaks here and there but don't become too bogged down in 'what songs are essential to know' etc...
There are songs that just can't be covered - or rather they can, but they will never ever sound like the original no matter how talented you are. Take stairway to heaven - other people can play it, but they can't play it like Jimmy - all those little nuances, different pressures on the strings etc...
If you want something simple that every guitarist i've ever known has known how to play it would be Oasis stuff- not my cup of tea but good to practice for beginners i think. (Not saying you're necessarily a beginner, just offering thoughts!)
And i think guitarists should learn 12 bar basics! It can help when adlibbing/jamming and you want to play solos =)
Plus, it ROCKS.

Nobody should know Hotel California. It's one of the most plodding, dreary, whiny, most predictable songs ever written, and if you have an ounce of musical ability you'll be able to play it without ever having learned it in advance - it's that easy.
Instead, here are five songs all guitarists should know:
1: 'Summertime', George & Ira Gershwin
Yes, I know everyone thinks they know it, and it's been played to death, but if you can get into chord substitution when accompanying this hoary old chestnut, you will make the people singing it sound like a million dollars.
2: 'Sweet Home Alabama', Lynryd Skynyrd
Because if you can just learn that riff, everyone will think that you can really play.
3: 'A Hard Day's Night', The Beatles
Because nobody, and I mean nobody, can agree on what exactly the first chord is.
4: 'Stairway to Heaven', Led Zep
Because it's there.
5: 'The Girl From Ipanema', Antonio Carlos Jobim
Because if you can negotiate the fiendishly subtle chords in this little baby and get properly Latin with it, you will look so sexy that a large number of the cute people in the room will want to sit at your feet and coo. It's one of those songs that a lot of people can sing, but almost nobody knows the chords.
