Wow some good answers here I wish I could pick more than one.My balls were falling apart check out my open question do I need to add more bread crumbs or omit the egg all together.

I add a tablespoon of splenda to my mixture before I make them. When ya make a nice homemade sauce, I love a little bit of a sweet taste.

I make them with 2/3 ground beef and 1/3 hot italian sausage, then use only fresh bread crumbs, never the ones in the store.

Just like Grandma taught me.

Butter sautéed dried red chilies.

You can buy them in the bag if you don't sun dry your own. Put them on a cutting board and slice very thin rings. I take the butter in a pan, melt it half way on med heat then toss in the slices chilies. It takes just a minute or two, and then I toss that into the meatball mixture.

My mouth is watering just thinking about it.
