It depends on what you're trying to grow. Most things will germinate fine if they're just composted. Some seeds won't grow, and others will germinate and a plant will grow, but the plant won't produce fruit - either because the parent plant was some kind of hybrid, or otherwise genetically messed up so as to keep the plants proprietary.
It's easiest to get the seeds at the nursery because if there is any prep they needed, it has been done, and because there are planting instructions on the package for each type of plant. Trees are hard to grow from seed and it might be easier for a beginner to just buy a sapling.

Watermelon's are easy. just dig a little bit of a hole and set the whole watermelon in it. It will rot, the seeds will "eat" the watermelon, it will root, and BLAMO! watermelon. Wrong time of year though. You should be harvesting by now. Should have done this about four months ago. Or 8 months from now.

Of course they can, where do you think the nursery gets them from? I've got a huge apple tree in my garden that was planted from an apple seed when I was a baby, I'm 23 now and its fab.

I think you have to let the watermelon and green pepper seeds dry before planting them.
