Why don't they just put a material that will last indefinitely on buildings/homes?

Nothing lasts forever. Metal might be best, but its expensive and really doesn't go with many homes. Slate and tile is very expensive, but they do break. Shingles are relatively inexpensive, and are perfectly fine if you do not have to worry about hurricanes. There are different grades. Architectural, or dimensional, shingles properly installed (ventilated attic is important) can last upwards of 30 years. Not a bad deal.

Tile roofs require stronger framing than asphalt shingles. If the house originally had asphalt shingles most of the time the roof structure would have to be reinforced to support the tile. This is an added expense most home owners do not want to take. In moderate climates an asphalt shingle roof will last about fifteen years on the south and west sides, twenty years on the north and east. The cost of a new asphalt shingle roof every fifteen years is not a real inconvenience.

Why do surgeons recommend surgury? Because it's what they do. Seriously, long-lived roofing material costs more. Is it cheaper over a lifetime? Absolutely! Now keep in mind that many people only stay in there homes for an average of 7 years and they are unwilling to make an investment for the future owner. Myself, I just put on asphalt shingles, but.....they are guaranteed for my lifetime. However, the catch is that I got the shingles at a great price. Otherwise, I was seriously considering metal roofing, since I have little doubt that they will bury me in the back yard someday. We are all price sensitive.
