I love potatoes, I'd probably eat them cooked any way.
One of my favorites is called Twice Baked Potatoes. Here's a good recipe...

Also if you cut up the little red bliss potatoes into quarters, drizzle with olive oil, sprinkle with salt and pepper and really whatever other seasonings you like. I like to use all-purpose seasoning, parsley, and dried minced onion. Bake them in the oven til tender and they are to die for.
Also German potato salad is really easy and something a little different from you regular mayo based potato salad. Here's a recipe for that too...

Although again, I like to use the red bliss because then you don't have to peel them and it gives the dish some added color.

Twice Baked Potatoes would work. Bake potatoes at 350 for an hour. Slice off a thin layer from the top so you can scoop the innards out into a separate bowl. Prepare the innards like you are making your normal mashed potatoes. Add in 1/2 cup shredded cheese, bacon bits, 1 Tbls butter, chopped onion (optional) and mix well. Scoop the mixture back into the empty potato skins. Top with a little bit of shredded cheese. Bake at 350 for about 10-15 minutes.

Well, if you live in a small apartment with no stove (but have a toaster oven), you can take some small potatoes or, a large one and cut them up, put them in tin foil and put a little extra virgin olive oil (or regular olive oil) and put salt and pepper in it. Wrap that up and put that in the oven for about 45 minutes at 350 degrees.
It comes out nice and tender. There are other ways, but this is the one I do most often.

Boil potatoes with the skins still on. When they are done, drain and let them cool then peel, and quarter them, lay them on a cookie sheet and brush with butter, then put them in the oven until they are browned. They are really good. Oh. and you can sprinkle them with parsley and/or parmesan cheese if you wish.
