There are about 50 - 75 worms in the bedding and I am adding the required potato slices every couple of days. When I remove the old potato slice, there is a wodge of branny stuff attached to the slice. I remove it also and toss it. What is that wodge? Is it a precursor to mold or something? Or can I safely leave it?

As yet, no baby worms in the box with the darkling beetles in it. Too soon, I think. But ever hopeful I am.

Well, you have to clean the whole thing from time to time...we always kept ours in bran, like you use for horses.
Red bran.
And we used sweet potato slices.

The wedge of branny-stuff might be larva?
Put them in separate containers & see if the larva come out.
