I see this in the pet stores, why do they put it in there and what kind is best to use

Fruits and vegetables are great for fish. Make sure they are actually eating the food because most fruits spoil quickly. If they'll eat it, go for it. Pacu's in the wild crack and eat nuts though they have extreamly powerful jaws and I don't recommend feeding nuts to your fish. All of my fish love Peas. Zuchini works well though cut all the way through the skin. Some fish eat romaine and spinich. A friend had a fish that loved bananas though I've never had very much luck with fruits. Most goldfish love thinly sliced oranges though be careful because oranges are acidic.

Fruit can be used to feed some types of tropical fish. This is generally a bad idea however since the fruit will disolve quickly into the water creating a horde of issues. If you decide you want to feed your fish a more natural form of food first find out were they are from in the world. Then choose food that would be available in the region. For example a fish that originates from New York should not be feed bannanas as this is not natural for them.

If you do feed your fish fruit make sure you remove any uneaten parts quickly to reduce the impact on your water.

Why: It's simply part of their diet. It's the same as feeding minnows to an oscar.

What kind: Depends on the fish you have. Not all fish will want to eat fruits and veggies though. If you go to a petstore that feeds their fish fresh fruit, ask them what you could feed your fish.

Be sure to remove any remaining fruit after an hour or two.

It depends on your fish, oranges and cantaloupe are good for Goldfish, and cucumber is good for most algae eating fish (Plecos, Algae Eaters, Otos). Apples are also good. Avoid fruits that are high in sugar like watermelon and raspberries...
