The recent answer omitted the important prerequisite of chilling the paper in the fridge prior to use.
Back to the question as asked.
Go for a chicken or lamb dish - vindaloo (hot) or a tindalooal (fiery) or a phal (explosive). Lots of water or lhassi and dont forget the fridge advice.

Well, I was going to say Chicken Rogan Josh - really nice and tomato-y but not that hot. What about Jalfrezi instead? With either vegetable or garlic rice, onion bhajee starter and keema naan on the side! Yum!

Chicken Jaipuri its hot but not too hot just nice and very tasty have garlic nan bread with it and rice,I love Indian food....
