It's a tie between season 3 and season 6.

Season 3 had Faith. Also, Cordelia was at her snarky best in season 3 and there were some other really classic moments (Band Candy, Spike's love's b*tch quote).

On the other hand, season 6 was really deep. Season 6 had Once More With Feeling and the Spuffy controversy. Season 6 had Xander and Anya's wedding. Season 6 had lots and lots of Spike with no shirt!
