5 acres should be more than enough. It's rare to encounter an enclosed building that is larger than an acre, especially since it could just be two or three storeys tall, and an acre-large building should be plenty of space for the indoor aspects of your recreation center. Four extra acres on the property should be enough for go-carts (say 50 feet on a side), a football field (slightly over an acre), a soccer field, and a baseball field (assuming both are about the same size as the football field).

20 would be a good size.
Anything larger than that and you'll be paying too much in maintenance fees, taxes, etc.
