From an evolutionary standpoint, we have eyes because the ability to see offers us an advantage in the collection of food etc, and in avoiding predators...
Here's how some scientists think some eyes may have evolved: The simple light-sensitive spot on the skin of some ancestral creature gave it some tiny survival advantage, perhaps allowing it to evade a predator. Random changes then created a depression in the light-sensitive patch, a deepening pit that made "vision" a little sharper. At the same time, the pit's opening gradually narrowed, so light entered through a small aperture, like a pinhole camera.
Every change had to confer a survival advantage, no matter how slight. Eventually, the light-sensitive spot evolved into a retina, the layer of cells and pigment at the back of the human eye. Over time a lens formed at the front of the eye. It could have arisen as a double-layered transparent tissue containing increasing amounts of liquid that gave it the convex curvature of the human eye.

I won't add to the barrage of obvious answers because human evolution could have taken a branch that meant sight would have become an irrelevant necessity. We could have evolved using a form of natural sonar or radar instead of sight.
Obviously somewhere down the line of evolution our species learned sight was a better form of hazard detection and was better suited to hunting. It would explain why we sleep at night and not during the day. Before electricity and artificial illumination we would bed down as soon as the light went down. We could have evolved like bats and our eyes would be smaller and useless. Or we could have kept our eyes as they are and evolved like cats and had excellent night sight. Its sound reasoning that our ancestors felt safer when they could see long distances during daylight hours.
This is why we have the eyes that we have right now.

We have eyes because the organisms from which we evolved had eyes. Eyes evolved because there is a selective advantage to being able to detect what is around. Even very primitive vision allowed organisms to avoid predators or to find food better, and thus survive better and pass along that ability to offspring.

Obviously God wanted us to enjoy all of his creations, from plantlife to animallife, not to mention the wonderful lands and scenery that we are surrounded with.
Imagine becoming a mother and never being able to see your childs smile.....
would be so sad not to have eyes and my heart goes out to all those blind folk,
