i'm more of a protector...
with my sensitive nature... it's hard to be protected, but this sensitivity makes my job easier when protecting others...!

She has to understand that working isn't easy and alot of things won't go her way. People with low tolerance tend to be pessimisstic too, because they dont understand that life isn't just a walk in the park. There are many things you can try, but I suggest you putting her in a situation where things are crucial, and possibly, difficult for her. Then you have to teach her to calm down and focus on the task at hand, instead of freaking out, or quitting, or getting angry. Through this, she might learn how to stay calm. Plan this out. Remember it has to be something she has to accomplish WITHOUT causing major damage. Hopefully you are the boss, so you can notify other employees or something in order to do this. If not, suggest it to your boss, but get your boss in a good mood first.
