Once I finish crocheting the body of the potholder, how do I finish it up? In other words, how do I do the finishing stich on the last row?

you can do 1 single crochet in each stich and 3 on each crochet

Do a reverse single crochet around the pot holder with 3 single crochets in the corners, When you reach the first chain stitch, chain 10 for the hanging loop.

Have you looked into doing the shell stitch around the edge? It gives a piece a nice finished look. Or, you could just finish it off with a slip stitch, or even a single crochet.

Are you doing the pot holder in the afghan stitch (you pull up loops all the way across, then pull a loop thru each on the way back)?

If so, you finish off the last row by pulling up the loop thru the bar and the loop on your hook -- only one loop left on hook. Repeat all the way across.

You can then do any kind of stitch all the way around. I recommend a row of single crochet first then any kind of fancy edging you want.
