If your cousin is a first cousin, her children are your first cousins, once removed. The children are NOT your second cousins, but if your cousin is a second cousin, her kids would be your second cousins, once removed. Nieces and nephews are the children of YOUR brothers and/or sisters.
When you have kids, your kids will be second cousins to your cousin's children (assuming your cousin is a first cousin).

first cousins, once removed. and when they have kids, those kids will be your first cousins, twice removed.
a cousin shares a grandparent. a second cousin shares a great grandparent. a third cousin shares a great-great grandparent... (so a # cousin is always your generation, but more distantly related the larger the number)
the child of any of the above is once removed. that child's child is twice removed. the following generation is thrice removed... (so the # removed refers to how many generations difference there is between you)

I dont know why everyones saying second cousins. Is it not second nephew/niece? They cant be cousins because theyre not on the same generation.

Is your cousin your first cousin? If s/he is, her/his kids would be your first cousins, once removed. If your parents are first cousins with him/her, his/her kids would be your second cousins.
Your nieces and nephews are your siblings' kids.

Well you and your cousin are first cousins but after that it goes to second cousins with their chilkdren then third with their children's children and so on. But putting it simple they are cousins all around.

I think they would be your first cousins, once removed.
But in many families they are thought of as nieces/nephews.
Though not technically correct, it might be a better description of your relationship. If so, you can always go with that.
