alot! its tough to just say a couple things because groups those three categories can differ greatly in their health. as a very young child, you are very susceptible to diseases due to the lack of a developed immune system, mostly because of 'inexperience' with the diseases the world has to offer. as you age, you develop more and more of a 'knowledge base' of diseases and your body is better at stopping those same diseases from reinfecting you. as you get even older, into an elderly age, your body begins to deteriorate (for various reasons) and your ability to fight off diseases becomes severely limited. also as you get older, your physical health decreases as your body is less able to handle physical stress. if you'll accept evolution, much of this has to due with the fact that human bodies arent really designed to live much past the age of 40. the act of aging itself is a complex topic and still not fully understood.
sex isn't as major in terms of communicable diseases, but for some diseases, there can be distinct differences in the ratios of males to females as to who is more likely to contract. moderate differences between men and women in physiology may change the ability of a disease to affect that person.
sex and age both come in to play when considering hereditary factors. inherited traits can vastly change your susceptibility to many types of ailments, such as a communicable disease like malaria to a hereditary disease like diabetes. the traits you inherit from your parents can increase or decrease your likelihood of becoming inflicted with such diseases. some hereditary traits are sex-linked, which means that one sex is more or less likely to get that trait from a parent. heredity can be quite a complex subject (and somewhat of a controversial one in some cases) and can require alot of study to get a good understanding of the relationships between health and heredity.

Those are major factors. People can improve health issues, but they will have limitations due to the factors you have cited.
