I'm going to the south of France next month-
We'll be starting in Nice, then going to Cannes. Should I reserve tickets online now, or just buy tickets when we want to leave? I saw that a new train leaves every 20 minutes or so, and I'd really prefer to wait til we leave to buy them, but I don't want to wait around the station due to sold out trains. Thanks!

Nice to Cannes is not a long trip.
If it is a local train you will not have reserved seats and you can take any train on the day of travel, or even a period of two months from the day you select for travel. And you would not get a reduction for booking early either.
So in that case, just buy it when you are at the station.

I checked it on the French train planner site, it is a local train, so no reserved seats.
Trains with ter are local, trains with TGV are high speed and need reserved tickets.

next month is September, I don't think the train tickets will be sold out, especially it runs every 20 min. I would do it in person and it's very easy to do it at the train station.
