If I didn't work in a restaurant and saw 99.9% of all restaurants during a busy shift I'd think "Oh My God! They're disgusting!" I don't know what time of day/night you were in their kitchen (I'm assuming) but most restaurants have cleaning procedures, i.e. every 30 minutes the floor is swept and the counters are wiped, etc.
But because I've worked in restaurants for 20 years, I've got an understanding about what is superficial dirt and what is deep, nasty, been there awhile dirt. If it's the latter, call your local health dept. and make a complaint.
Also...it is state law that the restaurant has to publicly post their health inspections. So somewhere, probably near the door from the kitchen to the dining room is their most recent inspection and it's score. Check it out next time your in the restaurant.

Most labor hours are managed by the "big boss". Restaurants are only allotted X amount of hours, therefore they don't have the labor hours to get on their hands and knees and scrub the floor with toothbrushes. Also after working a 12 hour shift you just want to clean as fast as you can and get home to your family or to try to get 6 hours of sleep before you have to get back to work another 12 hour shift.

Well, No I do not work in a restaurant. If restaurant cleanliness is a big issue for you, as it is with all of the American public, Why don't you report filthy restaurants to the health board. Maybe better yet, go work there and clean it up yourself. Otherwise, you should probably just give up on your quest.............................

I work in a restauraunt, and for the most part we try to keep it clean during openings...but believe it or not, it's not that easy. Now when you're closed I think you have no excuse not to take your time to clean EVERYTHING.

I do work in a restaurant and we have a cleaning crew that comes in every night to do bathrooms, windows ect. Then someone else comes in to do the whole grill area, so yes, our place is pretty clean. We also have carpet cleaners.

When I had my restaurant I was a stickler for cleanliness. And I always passed my health inspections with flying colors. We're not all disgusting places. :)
(Although I do agree that many many are.)
